WHere is an easy interpretation of a beverage from our latest cocktail list. It's a large-volume premix which is bursting full of tastes of the Christmas time, which makes it excellent for your holiday party. Save the extra syrup for morning drinks, desserts, or to mix another batch of the drink.

Serves 10 people
For the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Place all the items into a pot, heat until it reaches a light boil, mixing until the sugar dissolves. Then, turn off the stove and let it to cool entirely. Decant to a sealable bottle, seal and refrigerate it in the fridge, where it will keep for around a month.
Preparing the Batch Mix: Mix the specified liquid ingredients into a sizeable container, let it rest for one hour, then strain , ideally through cheesecloth, so it's fully clarified.
When ready to serve: Pour 85ml of your batch mix into your cocktail shaker filled with ice, gently stirring gently for a minute to cool it down. Strain into a frosted cocktail glass or equivalent, garnish with some cranberries and complete it by giving it a quick spritz of the essential oil over the drink.
